Spinach Salad
from Shirley Kindem, Apple Valley, MN

Salad

Place in a large bowel:

  • 2 packages of pre-washed baby spinach

  • 1 cup fresh sliced strawberries

  • 1 cup green grapes (can be optional)

  • 1/2 cup raisins (optional)

  • 1/2 cup slivered almonds

For added protein to this salad: Add 2 to 3 thinly sliced chicken breasts that have been cooked.
Pan sautéed the chicken breasts in olive oil until tender and chill them before adding them to the salad.

Salad Dressing:

Shake together to a sealed jar and store in the refrigerator until ready to use:
(Makes a generous amount, save extra for reuse.)

  • 1/2 cup sugar

  • 1/2 cup olive oil

  • 1/2 cup vegetable oil

  • 1/3 cup tarragon vinegar

  • 1/2 tsp. of poppy seeds

  • 8 oz. of half and half (cream)

Pour dressing over the salad and toss just before serving.
Serves 6 - 8. This is a delicious summer salad!
