Pumpkin Chocolate Chip Cookies

1-16 oz can One Pie Pumpkin or  2 cups fresh cooked pumpkin                                                 
4-1/2 cups flour
2 tsp cinnamon
2 eggs                                                                   
1 tsp salt
1-1/2 cups sugar                                                    
1 tsp vanilla
1 cup canola or other polyunsaturated vegetable oil                  
2 tsp baking soda added to
2 tsp milk
2 tsp baking powder                                              
2 cups semi-sweet chocolate chips

Preheat oven at 325 degrees. Combine wet ingredients together in one bowl and all dry ingredients in another.

Mix dry into wet a little at a time until well mixed, the batter is very thick. Add the chocolate chips.

Drop by heaping tablespoonfuls on ungreased cookie sheet and bake 10 - 12 minutes or use a cake tester.

These are very cake like cookies. Recipe can be doubled easily.
