Pineapple Ham Casserole

1 can (20 oz) pineapple tidbits or crushed (to hide from kids I use crushed)
½ cup mayonnaise
1 tsp salt
1 tsp prepared mustard
¼ tsp pepper
3 cups cooked rice
2 cups cubed fully cooked ham
Add other veggies like peas, corn, carrots as desired; eyeball amount you want!
1 c chopped green pepper
1 ½ cups (6 oz) shredded Swiss cheese (or cheese of choice) divided
1/3 c  chopped onion
 

  • Drain pineapple, reserve ½ cup juice, set pineapple aside.

  • In large bowl, combine the mayo, salt, mustard, pepper and reserved ½ c pineapple juice and mix well.

  • Fold in rice, ham, green pepper, 1 cup cheese, onion, pineapple

  • Transfer to greased 2 qt baking dish. Cover and bake at 350 for 30 minutes.

  • Sprinkle w/ remaining cheese.  Bake uncovered for 10 minutes or until heated thro and cheese is melted. 

  • Makes 6 servings.
