Hash Brown Ham Quiche
from Bonnie Milutin, San Jose, CA

4 c frozen hash brown potatoes
¼ tsp salt
¼ tsp pepper
3 T butter, divided
1 medium onion, chopped
½  cup chopped green pepper
½ cup chopped fresh mushroom (opt)
2 tsp flour
¾ cup diced fully cooked ham
3 beaten eggs
½ cup milk
½ cup shredded cheddar cheese

Saute hash browns, salt, and pepper in large skillet in 2 T butter until golden brown
Press onto bottom and up sides of greased 9" pie plate
In same skillet sauté the onion, green pepper and mushrooms in remaining butter
Remove from heat and sprinkle w/ flour
Stir in ham, eggs, and milk
Pour into hash brown crust

Bake 350 for 25 minutes
Sprinkle w/ cheese and bake 5 minutes longer or until knife near center comes out clean
Stand 10 minutes before cutting

6-8 servings.
