Ground Turkey Chili Recipe
from Ann Fitzgerald, San Jose, CA

1 lb. ground white meat Turkey (or tofu crumbles)
2 32 oz. cans crushed tomatoes (sometimes 1 crushed, 1 stewed)
2 16 oz. cans black beans
1 16 oz. cans kidney beans
1 16 oz. can pinto (or white) beans
1 large onion, diced
1/2 tsp. crushed red pepper
(I usually use more - but with nursing I used less)
2 heaping Tbls. chili powder

Optional:  chopped fresh tomatoes, chopped celery, 1 bottle of beer

Brown meat and drain.  Combine meat, one can crushed tomatoes and all other ingredients in a large pan.  Cook over medium-low heat, stirring frequently for 3 hours.

As mixture loses liquid, add more crushed (or preferably stewed) tomatoes and/or beer to it - but NOT water.  Taste and re-spice before serving.
