Strawberry Bread from Mindy Miller,
Campbell, CA
2 Cups Strawberries (Hulled, chopped, etc.)
3 Cups plus 2 Tablespoons Flour
2 Cups Sugar
1 Tablespoon Cinnamon (yes, it's tablespoon)
1 teaspoon salt
1 teaspoon baking soda
11/4 cup oil
4 Eggs, beaten
11/4 Cup chopped Pecans
Oven 350. Butter and flour TWO loaf pans. Combine dry ingredients. Combine
oil and eggs with strawberries and add to dry ingredients. Stir in pecans,
blending until moistened.
Spread batter into pans and bake for 45 to 50 minutes (or until toothpick
comes out clean). Cool in pans for 10 minutes before removing to racks. |
