Rhubarb Dessert (Incredibly Yummy!!)
from Shirley Kindem,  Apple Valley, MN

Mix as for pastry:2 C flour
1 C shortening (part butter)
2 T sugar

Press into jelly roll pan

Bake:350 for 10 min, or just barely browning

Mix together in large bowl until creamy:
6 egg yolks
2 C sugar
4 T flour
1/2 t salt
1 C cream (evaporated milk)
5-1/2 C finely cut-up rhubarb

Pour over crust

Bake: 350 for 40 -45 min

Remove from oven & spread meringue over top:
6 egg whites beaten stiff
1/2 C sugar, added gradually
1 t vanilla

Sprinkle with 1/2 C coconut
 
Bake:350 for 12 min until golden brown.
Very best when served warm.  Serves 12 - 15

Note: I try to make this for a larger group for the 4th of July.  It is a favorite of nearly everybody!
