Pina Colada Fruit Dip from Mindy Miller,

Ingredients:
1lb crushed pineapple in juice - undrained 2 packages instant coconut
pudding mix - 2 boxes (the 4 serving size) 1 1/2 cups milk 1 cup low-fat sour cream
Preparation:
In food processor bowl with metal blade or blender container, combine all
ingredients. Cover, process 30 seconds. Refrigerate for several hours or
overnight to blend flavors. Serve with fresh fruit. Makes 5 cups.
Tip:
When I followed the recipe exactly I found that it didn't all fit in my
blender at one time, also, it really makes a lot of dip. I'm sure you can cut
the recipe in half and easily have enough, it's very rich and very delicious.
