Cranberry Roasted Chicken with Sweet Potatoes Casserole
from Ann Fitzgerald, San Jose, CA

1 lb. Sweet potatoes, thinly sliced

(do at least 4-6 layers of sweet potatoes, they reduce)

4 chicken breast halves (boneless)

1 16 oz. can whole berry cranberry sauce

1/4 C olive oil

1/2 tsp. ground ginger

1/2 tsp. salt

1/4 tsp. ground black pepper

Preheat oven to 375

Layer potatoes evenly in a 13 x 9 inch baking pan. Place chicken on top. Whisk remaining ingredients together. Pour mixture evenly over chicken and potatoes.

Bake uncovered for 50 minutes or until chicken is cooked throughout and potatoes are tender. Serves 4.
