Cinnamon & Citrus Scented Couscous from Mindy Miller,
Campbell, CA
4 kiwi, peeled, sliced and quartered
1 cup red grapes
1 can mandarin oranges, drained
1/2 cup dried cranberries
1 cup couscous
1 cup orange juice
1/4 cup sugar
1 Tbs. oil
1 Tbs. grated orange peel
1 Tbs. cinnamon
1/2 cup chopped walnuts or sliced almonds
Place couscous, sugar, orange peel and cranberries in
glass bowl. In saucepan heat orange juice and oil till boiling. Pour
over couscous, stir and cover tightly w/ plastic wrap.
Let sit for 20 minutes.
Fluff w/ fork and stir in cinnamon.
Let cool completely.
Gently stir in fruit and nuts.
Enjoy at room temp or refrigerated.
