Carrot Cake from Wendy Murphy, San Jose,

Ingredients 2 cups grated carrots 2 cups flour 2 tsp baking soda 2 tsp baking powder 2tsp cinnamon 2 cups sugar 1tsp salt 4 eggs 1 1/4 cup vegetable oil 1 cup nut of your choice 1 1/2 tsp vanilla 1 small can crushed pineapple (drained).
Mix dry ingredients. Add oil, carrots, eggs, vanilla, nuts and drained
pineapple.
Bake in greased 9x13 pan at 325 degrees for 1 hour or longer if needed.
Cream cheese frosting 1/2 cup butter 8 oz, of softened cream cheese 1 tsp vanilla 1 pound powdered sugar
Mix together and add milk if too thick
